This nutritious salad is perfect for a quick winter meal. Make it more substantial
by adding your choice of protein – chicken, beef, fish, tofu, etc.
10 cups baby spinach (or mixed greens)
2 apples, cored and thinly sliced
4 oz. crumbled goat cheese
3/4 cup macadamia nut pieces
2 Tbsp. thinly sliced red onion
Grilled chicken, steak, shrimp, tofu (optional)
Combine all ingredients in a large salad bowl. Top with
Macadamia Nut Oil Salad Dressing. Makes 4 servings.
