Breadfruit and Shellfish Hash

  • 3 cups breadfruit, cubed
  • 1 cup fresh shelled shrimp, clams or other shellfish
  • 2 cloves garlic, diced
  • 1 onion, sliced
  • 1 green onion, sliced
  • 1/2 cup juice from shellfish
  • 1/4 cup vinegar
  • Salt and pepper to taste

Sauté garlic, add onion and shellfish. Season with salt and pepper. Add liquid from shellfish and stir until boiling. Add vinegar and boil a few minutes. Add breadfruit. Cover and cook 5 minutes or until breadfruit is done. Add sliced green onion. Serve hot.
