'Ulu Salad

From The Wai'anae Diet Cookbook, 'Elua (Vol. II)

  • 3 breadfruit, baked or steamed and cut into bite-size pieces
  • 1 stick kamaboko, diced, or 1 cup cooked shrimp
  • 11/2 cups chopped broccoli florets, lightly steamed
  • 1/2 onion, diced
  • 1 cup pasta
  • 1 cup low-fat mayonnaise
  • 1 tsp. salt
  • Garlic and black pepper to taste

Mix all ingredients, chill and serve. Makes 20 half-cup servings (71 calories, 0.2 grams fat).
