- 1 very ripe, soft breadfruit
- 11/4 cup all-purpose flour
- 2/3 cup sugar
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 3 eggs, well beaten
- 1/3 cup canola oil
- 1/3 cup milk
- Salt to taste
Sift together flour, sugar, baking powder, baking soda and salt in a bowl. Combine eggs, oil, milk and breadfruit. Add to dry ingredients and beat until smooth. Pour into an oiled loaf pan, 9" x 5" x 3", and bake at 350 degrees for one hour or until done.
