Sweet Potato Tzimmes with Carrots and Prunes

From Weight Watchers’ Healthy & Happy Celebrations cookbook

1 1/2 lbs. sweet potatoes, peeled and cut into 3/4-inch chunks
1 lb. carrots, peeled and cut into 3/4-inch pieces
1 cup pitted prunes, halved
1/2 cup golden raisins
1/2 cup apple cider
3 Tbsp. packed dark brown sugar
1/2 tsp. salt
1/8 tsp. ground allspice
1 Tbsp. margarine, cut into small pieces

Preheat oven to 375 degrees F. Spray an 11-by-7-inch baking dish with nonstick spray. Combine sweet potatoes, carrots, prunes, raisins, cider, brown sugar, salt and allspice in large bowl. Pour mixture into prepared baking dish and dot with margarine. Cover with foil and bake 30 minutes. Remove from oven, stir, cover again, and bake 30 minutes longer. Remove from oven, stir, cover, and bake until potatoes and carrots are very tender, about 30 minutes longer. Let cool slightly; cut into 12 squares. (Tzimmes can be reheated in the pan, covered with foil, in a 300-degree F oven until hot, 20 to 30 minutes.) Makes 12 servings.
