1/2 lb. ground lean lamb
1/2 lb. ground extra-lean ground beef (5% fat or less)
1/4 cup fat-free egg substitute
1/2 cup chopped scallions
1/3 cup plain dried bread crumbs
4 Tbsp. finely chopped walnuts, divided
4 Tbsp. chopped fresh flat-leaf parsley, divided
1/2 tsp. dried mint
1/2 tsp. dried oregano
1/2 tsp. cinnamon, divided
1/2 tsp. salt
14 1/2 oz. can diced tomatoes
1 cup tomato puree
1/4 cup tomato paste
Combine lamb, beef, egg substitute, scallions, bread crumbs, 2 tablespoons walnuts,
2 tablespoons parsley, mint, oregano, 1/4 tsp. cinnamon, and salt in medium bowl.
Form into 16 meatballs. Combine diced tomatoes, tomato puree, tomato paste, and
remaining 1/4 teaspoon cinnamon in 5- or 6-quart slow cooker. Transfer meatballs
to slow cooker; turn gently to coat with tomato mixture. Cover and cook 4 to 6 hours,
or until instant-read thermometer inserted into center of a meatball registers 160
degrees F. Divide meatballs and sauce evenly among four bowls. Serve sprinkled with
remaining 2 tablespoons walnuts and 2 tablespoons parsley. Makes 4 servings.

Serving Suggestion
Whole-grain spelt, an old-world variety of wheat, has become more popular due to
its high protein content and mild flavor. Cook 1/2 pound spelt or whole-wheat spaghetti
according to package directions to serve with meatballs and sauce. The per-serving
