Pineapple Chutney

From The Hawai’i Farmers Market Cookbook by the Hawaii Farm Bureau Federation

4 cups chopped fresh pineapple
15 oz. package golden raisins
1 1/2 cups vinegar
1 1/2 cups brown sugar
1 Tbsp. salt
2 Tbsp. minced ginger
2 Tbsp. minced garlic
1 medium onion, chopped (optional)
2 – 3 Hawaiian chile peppers, seeded and minced
1 cup chopped macadamia nuts (optional)

In a large saucepan, combine all ingredients except nuts. Bring to a boil, reduce heat, and simmer until pineapple is tender, about 30 minutes. Continue to cook until chutney thickens to desired consistency. Add nuts, if desired. Remove from heat and spoon into sterilized jars. Cover, cool and refrigerate. Makes 6 cups.
