Denver-style Shirred Eggs

From Weight Watchers’ Mix It, Match It cookbook

2 tsp. olive oil
3/4 cup diced lean ham
1 small green bell pepper, chopped
1 small onion, chopped
4 large eggs
1/8 tsp. black pepper
3/4 cup shredded fat-free cheddar cheese

Preheat oven to 325 degrees F. Spray four (6-ounce) ovenproof ramekins or custard cups with nonstick spray. Heat oil in medium nonstick skillet over medium-high heat. Add ham and cook, stirring occasionally, until browned, about 3 minutes. Add bell pepper and onion; cook until tender, stirring occasionally, about 5 minutes. Divide ham mixture among ramekins. Carefully break one egg into each ramekin. Place ramekins on a small baking sheet and bake just until eggs begin to set, about 15 minutes. Sprinkle each egg with pepper and 3 tablespoons of the cheese. Bake until egg whites are opaque and yolks are set, about 4 – 5 minutes. Makes 4 servings.
