3/4 cup small-dice lychee (peeled and seeded)
1/3 cup small-dice orange
1/3 cup small-dice ripe papaya
1 Tbsp. lemon juice
1 Tbsp mild honey
1/2 – 1 tsp. sambal or chili garlic sauce
2 Tbsp. minced red bell pepper
1 tsp. minced ginger
Dash of salt
Combine all ingredients. Refrigerate at least 1 hour. Garnish with fresh cilantro
leaves and a slice of lemon or lime. Makes 4 servings.
